the highly requested chicken pancake and a bit of history🍗 of soy garlic fried chicken! Have you guys had @bonchonchicken ? What about @kyochon_official ? Here’s the recipe to the chicken breast pancake (you can definitely make this with chicken thighs, but I found chicken breast to stay put a little better!) 5-6 Tbsp cornstarch or potato starch 1 cup water 1 piece chicken breast salt; pepper 1 tsp minced garlic • mix & set aside the cornstarch water until it separates (10-15 min) • cut up the chicken breast into small pieces and season with salt, pepper and garlic • once the Oobleck (wet starch layer) separates in the bottom, discard the water and massaged it into the chicken 1 Tbsp each of: sugar, soy sauce, vinegar, water 1 tsp minced garlic • mixing ingredients and bring it to a boil Dip the chicken in the sauce (or brush the sauce onto the chicken, pancake) and enjoy!

egg-bokki inspired by @까리레시피 🥚 this is basically an ultra high-protein tteokbokki ☺️ if you can’t find canned quail eggs, 4-5 regular eggs are also so so good with this recipe. I really was going to save this as a banchan to eat with some rice later but did end up eating it all in one sitting.. so it’s a 10/10 for me !! here are the ingredients you need: 1 can of quail eggs (boiled) 1/2 cup of water with 1-2 dried anchovies 1 Tbsp sugar 1 Tbsp fine gochugaru 1 tsp minced garlic 1 Tbsp gochujang 1 Tbsp honey Black pepper 1 Tbsp cornstarch slurry 1) drain & dry the quail eggs 2) heat 2-3 Tbsp of oil on a pan. In a pot, bring 1/2 cup of water with dried anchovies on the side 3) in the pan, pan fry the quail eggs while constantly stirring so they crisp up on the outside 4) in the pot, dissolve all the sauce ingredients and let it simmer 5) once the sauce thickens, pour it over the crisped quail eggs. Boil another 10 minutes 6) top with sesame seeds and shredded mozzarella and enjoy! Enjoy and welcome to cafe maddy ☺️ #tteokbokki

Why didn’t I think of this sooner?! The disclaimer is that nothing will beat the fall-off-the bone tender Galbijjim you can get from a pressure cooker like instant pot. But when you’re feeling lazy, this easy version actually does the trick. I grew up eating Galbijjim during Korean holidays and big family gatherings, and it was a treat probably because it was a lot of work for my grandma or my mom to make for a big family. I simplified this recipe, hoping that even on a weeknight, when you’re craving the flavors of galbijjim, you can, in fact enjoy it using a rice cooker :) Here’s the full list of ingredients that make Galbijjim just enough for two: 1.5 lb bone-in short ribs 1/4 peeled apple 1/2 small onion 4 Tbsp soysauce 1 Tbsp sugar 1 Tbsp brown sugar 4 cloves (1 Tbsp) minced garlic handful of seedless grapes 1 Tbsp sesame oil Lots of cracked black pepper large chunks of carrots, Korean radish, mushroom (optional), and scallions To give it a bit of a kick, throw in some sliced Serrano or jalapeño peppers with everything else enjoy! #galbijjim #koreanfood #koreancooking #cooking #shortribs #shortribrecipe
