The Ultimate Christmas Porchetta is here! Loaded with plenty of fresh herbs and spices, this is packing some serious flavour cooked using the @WeberBBQAusNZ Rotisserie. Sometimes you just can’t beat the flavour of cooking over charcoal! 🔥 Full written recipe below; - For the filling, finely chop fresh rosemary, sage, thyme and chilli and place in a small mixing bowl. - Add the zest of a lemon, 1/4 cup of olive oil, the juice of the lemon and mix well. - Butterfly 2.5kg of pork belly and lay flat on a chopping board meat side up. - Season the meat with salt and cracked pepper then layer on the fresh herb filling. - Sprinkle 1/4 cup of toasted pine nuts. - Roll the pork belly and twine up tightly. - Skewer with the rotisserie attachment and then season the rind with quality salt flakes. - Place the rotisserie Porchetta on the Weber Kettle with the lit hot charcoal on both sides. - Close the lid and allow to cook for roughly 2 hours. - Once the crackle has set and you have hit and internal temperature of 68C remove from the Kettle. - Allow to rest on a wire rack for 15 minutes. - Remove the rotisserie attachment and then gently slice and serve.
