Episode 2 of my hidden veggies series, LET'S GO 💚💚💚 INTRODUCING MY GREEN GODDESS PASTA SAUCE... or if you're trying to convince your toddler to eat their greens this is HULKS favourite meal or Elphabas MAGIC green sauce! 🍝 Pasta is my ultimate comfort food and this bowl is super nourishing and perfect for a quick, wholesome weeknight dinner or meal prep! Tag someone who’d love this bowl of creamy, dreamy, GREEN, goodness! You will need 👇🏼 (serves 4) 🥄 1 tbsp olive oil (to cook the pan ingredients) 🥒 1 courgette, chopped 🫛 150g cup frozen green peas 🧄 3 garlic cloves, minced 🧂 1/4 tsp salt (adjust to taste) 🍃 100g of spinach 🥛 70ml oat cream (or soy cream or oat milk) 🍃 a small handful of fresh basil 🍋 1 tbsp lemon juice 🍯 10g of syrup or honey + Your toppings: I like extra chopped basil, parmasan cheese and some chilli flakes + Protein: I like to use lentil pasta to make this a high protein pasta dish OR you could add in your favourite protein source + the pasta of course!! Packed with immune boosting ingredients, this quick and easy homemade pasta sauce is the perfect way to sneak a few more vegetables into your diet👏🏼. You will need 👇🏼 (serves 4) 🫑1 red bell pepper 🥕3 large carrots 🍅200g tomatoes 🧄 1 small bulb of garlic (or 2 tsp garlic granules) 🥄 A big drizzle of olive oil 🥄 1 tsp salt (add to your taste) 🥄 1 tsp pepper (add to your taste) 🥄 1 tbsp mixed herbs + 400ml oat milk or coconut milk or pasta water or single cream HOW TO👇🏼 Assemble as demonstrated in the video! I don’t have a big blender so I used my nutribullet and blended in batches. LISTEN UP 👇🏼 remember to squeeze out the garlic after cooking, you do not want to blend up the skin (gross!) OVEN @ 175 fan for ~20 mins - want to air fry? 160 for 10 - 12 mins - Egg alternatives = 1 tbsp of chia seeds or ground flax with 2 tbsp of water, leave to set for 10 mins - For egg alternatives: use 50ml of milk instead 🥐This recipe is my take on a breakfast croissant casserole or croissant french toast! SINGLE SERVE MICROWAVE STICKY TOFFEE PUDDING 👇🏼: 🥄2 tbsp oat flour 🍯 1/2 tbsp maple syrup or agave 🥄1/4 tsp baking powder 🧂Pinch of salt 🥛1 tbsp milk of choice 🥜1 tsp almond or peanut butter (tahini = a nut free option) ✨2 finely chopped Medjool dates 🍯1/4 tsp vanilla extract HOW TO? 👉🏼 Add all ingredients to a microwave safe bowl, microwave for 40-70 seconds.
