Use a cookie scoop to put on parchment paper and freeze 20 minutes. Chocolate topping is sugar free chocolate chips (I used Lily’s) and coconut oil, microwave in increments of 30 seconds stirring in between. Low Carb BBQ Chicken Casserole Put shredded chicken in the bottom of a skillet and add garlic salt and chopped red onion. Pour some low carb bbq sauce over the chicken, this is my favorite brand and I used about ¾ of the bottle. Cover with some shredded jack cheese and some shredded cheddar cheese. Top with coleslaw mix and then cover with the remainder of the cheese and then put on your crumbled bacon and bake at 425 degrees for 15 minutes. LOVED this so much and the leftovers were great too.
