I’m making every country’s national dish - starting with this UK classic! 🇬🇧🍽️ What country should I cook next? 👀👇 Ingredients: Fresh cod fillets 250ml sparkling water 200g plain flour 1 tsp baking powder Salt Black pepper 1 tsp Smoked paprika Maris Piper potatoes Vegetable oil Tartar Sauce: 3 tbsp mayo 1 tbsp capers 1 tbsp gherkins 1 tsp Dijon mustard 1 tbsp fresh lemon juice 1 tbsp fresh parsley Salt and pepper Method: 1. Peel the potatoes, chop into planks and then into 1cm thick chips. Wash in cold water to remove the starch. 2. Boil the chips for 7 mins, drain and leave to steam dry on a wire rack. 3. Once cooled, fry them for 3 mins at 130 degrees ceclius. Allow to cool on a wire rack. 4. In one bowl combine flour, paprika, baking powder, salt and black pepper. Then whisk in the sparkling water and leave to rest. In another bowl season flour with salt and black pepper. 5. Season the cod with salt, leave for 15 mins and then pat dry. 6. Combine all the tartar sauce ingredients and place into the fridge. 7. Coat the cod in seasoned flour, then coat in the batter, allow excess batter to drip off and fry at 180 degrees celcius for 6-7 mins. Set aside on a wire rack. 8. Fry the chips for 3 mins until golden brown, then season with salt. Serve and enjoy! #fishandchips #britishfood #nationaldish #Recipe

For the Chicken Marinade: 500g chicken breast 100g plain yogurt 1 tbsp fresh lemon juice 2 cloves garlic 1 tbsp minced ginger 1 tsp ground cumin 1 tsp ground coriander 1 tsp paprika 1 tsp garam masala 1/2 tsp chilli powder 1/2 tsp turmeric 1 tsp salt 1 tsp black pepper For the Masala Sauce: 1 tbsp ghee 1 small onion 2 cloves garlic 1 tbsp minced ginger 1 tsp ground cumin 1 tsp ground coriander 1 tsp paprika 1 tsp garam masala ½ tsp turmeric ½ tsp chili powder 400g tomato pasata 100ml double cream 1 tbsp tomato puree 1 bay leaf 1 tsp honey Salt Black pepper Fresh coriander (for garnish) Rice (to serve with) For the Dough: 125g bread flour 1 tsp honey 1 tsp salt 1 tsp baking powder 60g plain yogurt 60ml warm milk 1 tsp oil For the Garlic Butter (Naan): 2 tbsp butter 1 clove garlic, minced Fresh coriander Pinch of salt Tikka Masala Method: 1. Mix yogurt, lemon juice, garlic, ginger, and spices in a bowl. Add chicken chunks, coat well, and marinate for at least 1 hour. 2. Cook the chicken in a hot pan with some oil until the chicken has colour on all sides. 3. Heat oil or ghee in a pan over medium heat. Cook the onions with a bay leaf until the onions are soft and golden brown. 4. Stir in cumin, coriander, paprika, garam masala, turmeric, and chili powder. Cook for 30 secs. Add garlic and ginger, cook for another 1-2 mins. Add tomato puree and cook for 1 min. 5. Add the tomato pasata and honey. Simmer for 10 mins, then blend the sauce until smooth. 6. Return to the pan, stir in cream, season with salt, Garam masala and coriander. Simmer for another 5 mins. Add the cooked chicken to the sauce and simmer for 5 more mins. 7. Garnish with fresh coriander. Serve with naan and rice. Naan Method: 1. In a bowl, mix flour, salt and baking powder. Add yogurt, warm milk, and oil. Mix until it forms a rough dough. 2. Knead for 5-7 mins until smooth. If sticky, add a little flour. Then cover and let rest for 30 mins to 1 hour. 3. Melt butter in a pan, add garlic and cook for 30 secs. Stir in chopped coriander and a pinch of salt. Set aside. 4. Divide dough into 3 equal balls. Roll each ball into an oval shape. 5. Heat a dry pan on high heat until hot. Place a naan in the pan and cook for 45 secs until bubbles form. Flip and cook for another 45 secs. 6. Remove and brush with garlic butter immediately. Ingredients: 600g stewing beef (I used beef shin) 2 tbsp plain flour 1 tsp salt 1 tsp black pepper 2 tbsp beef dripping 400ml beef stock 300ml Guinness 3 potatoes 1 carrot 1 onion 1 leek 2 sprigs fresh thyme 2 bay leaves 60g pearl barley Fresh parsley for garnish Method: 1. Chop the beef into large chunks, season with salt and black pepper, lightly coat in plain flour. Heat a pan over medium-high heat with some beef dripping and sear the beef on all sides. 2. Remove the beef, add chopped carrot, onions, leeks and pinch of salt and black pepper. 3. Pour in the Guinness to deglaze the pan, scrapping the bottom. Simmer for a few mins. 4. Then add the seared beef, stock, thyme and bay leaves. Cover and cook on low for 2 hours. 5. Toast the barley in a separate pan over a low-medium heat for a few mins. Add the barley and chopped potatoes, then cook for a further 1 hour. Remove the bay leaves and thyme, serve and enjoy! #beefstew #irishfood #nationaldish #Recipe

Ingredients: 750g bone-in, skin-on chicken thighs 5 cloves garlic 4 tbsp soy sauce 5 tbsp white vinegar 240ml water 1 tbsp whole black peppercorns 2 bay leaves 1 tbsp oil 1 tbsp sugar Method: 1. In a bowl, mix the chicken with soy sauce, garlic, and black pepper. Let it marinate for at least 30 minutes (or overnight for deeper flavour). 2. Heat oil in a pan over medium-high heat. Remove chicken from the marinade (save the marinade) and sear for 2-3 mins per side until browned. 3. Pour in the reserved marinade, vinegar, water and sugar. 4. Let it simmer for a few mins without the lid to cook out the vinegar. 5. Cover, and let simmer on low heat for 30 mins or until the chicken is tender. 6. Fluffy pancakes ingredients: 200g plain flour 2 tbsp sugar 2 tsp baking powder Pinch of salt 250ml milk + 1 tbsp lemon juice 2 eggs 2 tbsp melted butter Extra butter for cooking Method: 1. Mix the milk with lemon juice and leave for 5 mins. 2. Whisk together the flour, sugar, baking powder and salt. 3. In another bowl whisk together the egg, milk and melted butter. 4. Pour the wet ingredients into the dry ingredients, stir and fold until just combined. Leave to rest for 15 mins. 5. Heat a non stick pan, add some butter and pour in some of the mixture. Cook for 1-2 mins on each side until golden brown and fluffy. Serve and enjoy! Crepe ingredients: 125g plain flour 2 eggs 300ml milk 1 tbsp melted butter 1 tbsp sugar Method: 1. In a bowl, whisk the eggs and milk together. 2. Add flour gradually, whisking until smooth and lump-free. 3. Stir in melted butter and sugar. 4. Let the batter rest for 15-30 mins. 5. Heat a non-stick pan over medium heat and add a little butter. 6. Pour a small amount of batter into the pan, tilting the pan to spread it thinly and evenly. 7. Heat oil in a pot over medium heat. Add chopped onion and cooked until golden brown. 2. Add minced garlic, ginger, salt and black pepper. Add chicken chunks. Cook until lightly browned. 3. Chop the carrot and potato into chunks, add to the pan and then stir in flour and curry powder to coat everything. Cook for 1-2 mins. 4. Pour in the stock and stir well. Add soy sauce, Worcestershire sauce, ketchup, and honey. 5. Simmer for 20 minutes until the vegetables are soft and the sauce thickens. Whilst it simmers cook the rice. 6. Ingredients: 300g beef mince 300g pork mince 1 red onion 1 carrot 2 celery sticks 50g tomato paste 250g tinned tomatoes 100g tomato pasata 200ml red wine 150ml milk 3 tbsp extra virgin olive oil Salt Black pepper Fresh Tagliatelle pasta Method: 1. Heat the olive oil over a low to medium heat. Add chopped onion and cook for a few mins. Add the chopped carrot and celery, cook 5 mins. 2. Pour in 1/2 the red wine and cook the wine off for a couple of mins, then add the minced beef and pork. 3. Season with salt and black pepper, cook until all the mince has browned and no longer pink. 4. Pour in the remaining red wine, cook for a few mins until the liquid has evaporated. 5. Add the tomato paste, tinned tomatoes, pasata, add 600ml of hot water. Stir and cook on a low heat for 3-4 hours. 6. Stir occasionally, if the sauce becomes too dry whilst it simmers, add a little more water when needed. 7. After it’s simmered for 3-4 hours, pour in the milk cook for a further 5 mins. Cook your desired pasta of choice. 8. In a separate pan, add your cooked pasta and some of the meat sauce, along with a splash of the pasta water. Heat over a low heat, stirring until the pasta is fully coated. 9. Serve, top with some more meat sauce and grated Parmesan. Enjoy! #bolognese #italianfood #nationaldish #EasyRecipe

It’s National Pie Week, so I had to make a proper British classic! 🥧🇬🇧 Who else loves a homemade pie?! Shortcrust pastry ingredients: (for 20cm wide tin) 400g plain flour 200g unsalted butter 1 tsp salt 6 tbsp cold water 1 egg yolk 1 egg (for egg wash) Ingredients: 4 boneless skinless chicken thighs 1 tbsp butter 1 tbsp olive oil 1 leek 3 cloves garlic 2 tsp dried thyme 1 tbsp plain flour 200ml chicken stock 100ml double cream 1 tsp Dijon mustard Salt Black pepper Method: 1. In a large bowl, rub the cold diced butter into the flour until it looks like fine breadcrumbs. Add salt and stir it in. 2. Add egg yolk and cold water a tablespoon at a time, mixing until the dough just comes together. 3. Shape into a disc, wrap in cling film, and refrigerate for 1 hour before using. 4. Heat butter and olive oil in a pan, cook the chicken until golden. Season with salt and black pepper. Remove and set aside. 5. In the same pan, soften the leeks and garlic over low heat. Add thyme, salt and black pepper. 6. Stir in flour, cook for 1 min, then gradually whisk in chicken stock. 7. Stir in double cream and mustard. Simmer 5 mins until thick. Add the cooked chicken, mix well, then let cool completely before filling the pie. 8. Roll out 2/3 of the pastry to 0.4cm thick and gently press it into the base and sides of your tin. Trim excess, leaving a slight overhang for sealing later. 9. Line with baking paper and fill the bottom with rice or baking beans. Bake at 200°C for 10 mins. 10. Remove rice and baking paper, brush base with egg wash, and bake 5 more mins. 11. Add cooled chicken and leek filling evenly. Roll out the remaining pastry, place on top, and crimp the edges together with a fork. Brush with egg wash and make 2 small cuts in the center for steam to escape. 12. Bake at 200°C for 30 mins or until golden brown and crisp all over. Rest 5-10 mins before removing from tin to help set. Enjoy! #nationalpieweek #britishfood #homemadepie #comfortfood
