I’ve added the store locator link in my bio so you can easily see where you can find them! 🫶🏻 what you’ll need: 1 pack of Old El Paso Carb Advantage Cruchy Taco Shells 1 lb ground beef 1/2 onion, diced 1 taco seasoning packet 1/3 cup taco sauce Iceberg lettuce, shredded Shredded Mexican cheese freshly diced tomatoes 1 tbsp avocado oil for the cilantro lime crema 1 ripe avocado 1/2 cup plain Greek yogurt Juice of 1 lime 1 small garlic clove 1/2 cup fresh cilantro 1 tsp olive oil 2 tsp honey Salt to taste 1-2 tbsp water to thin, as needed instructions: 1. Preheat a large pan over medium-high heat. Add the avocado oil, then the diced onion. Sauté for a few minutes until softened. 2. Add the ground beef and cook for 7-10 minutes, breaking it up as it cooks, until browned and fully cooked through. 3. Stir in the taco seasoning and taco sauce. Let it simmer for a few minutes so the flavors come together. 4. Optional: Mix in some shredded cheese until melted for an extra cheesy taco filling. 5. To make the cilantro lime crema, add all ingredients to a blender or food processor and blend until smooth. Add 1-2 tablespoons of water to thin it out to your desired consistency. 6. Warm the taco shells according to the package instructions. 7. Time to assemble! Fill each taco with the meat mixture, shredded lettuce, diced tomato, and a little extra cheese. high protein s’mores pudding cups 👌🏻 Makes 4 servings 278 calories & 21g of protein per cup 🫶🏻 What you’ll need: 1oz box of sugar-free chocolate pudding mix 2 cups Fairlife chocolate milk 1/2 cup plain Greek yogurt 1/2 cup chocolate protein powder or marshmallow protein powder (I used Clean Simple Eats) 8oz zero-sugar Cool Whip 6 graham crackers, crushed Toppings for serving: Marshmallow fluff SF Dark chocolate chips Instructions: In a large bowl, whisk together the chocolate milk and pudding mix according to the package directions. Let it chill in the fridge for about 5 minutes, until soft set. Once the pudding is set, gently mix in the protein powder until smooth. Then fold in the Greek yogurt until fully combined. Add about 6–8 graham crackers to a zip-top bag and crush into small pieces. Grab 4 small jars or containers. Add about ¼ cup of crushed graham crackers to the bottom of each, pressing down to form a base. Add a layer of pudding mixture, followed by a layer of Cool Whip, and then another layer of pudding. If meal prepping, stop here, seal with airtight lids, and store in the fridge for up to a week. (but it tastes best if even within the first 3-5 days!) creamy street corn shrimp skillet 👩🏼🍳🤤🌽 What you’ll need: for the shrimp: 1 lb raw shrimp, peeled & deveined 1 tbsp olive oil 1 tsp chili powder ½ tsp smoked paprika ½ tsp garlic powder 1/2 tsp each of salt & pepper for the creamy street corn sauce: 2 tbsp butter 2 cups corn (fresh, frozen, or canned) 4 cloves garlic, minced 2 jalapenos, finely diced 1/2 cup low-fat cream cheese (softened) 1/3 cup crumbled cotija cheese 1/2 tsp chili powder 1/2 tsp smoked paprika 1/2 tsp onion powder Juice of 1 lime 1/3 cup milk (+ more if you want it creamier) 2 tbsp chopped cilantro To Serve: Extra cotija cheese Cilantro, freshly chopped Hot sauce Sliced avocado, optional Instructions: 1. Toss shrimp with olive oil, chili powder, smoked paprika, garlic powder, salt, and pepper. 2. Heat a large skillet over medium-high. Cook shrimp for 1-2 minutes per side, until they are just pink and opaque. Remove from skillet and set aside. 3. In the same skillet, add butter. Sauté the corn, garlic, and jalapeño for 3-5 minutes, until the corn is slightly charred and fragrant. 4. Reduce heat to medium-low. Stir in the cream cheese until it is melted and smooth. Add cotija, lime juice, and milk. Stir until sauce is creamy. Add more milk if you’d like it a bit more saucy! 5. Let it simmer on low for a few minutes until the sauce has slightly thickened. Top with some extra cojita and a sprinkle of cilantro. Serve immediately. You can serve it as is, over rice, or cauliflower rice.
